Makes 1 serving

Farm Sausages with Roasted Vegetables

If you buy high-quality farm or supermarket sausages, you’ll get the best flavour. This makes a generous serving, but you can use any leftover vegetables as a side dish the next day. It cooks in the halogen in 15 minutes.

Ingredients

2–3 good quality sausages

1 red onion, cut into chunks

1 red pepper, cut into chunks

1 garlic clove

1 tbsp olive oil (optional)

Salt and freshly ground black pepper

1/2 x 200g can of artichoke

hearts, drained and halved

2 plum tomatoes

To serve

Mashed sweet potatoes

Chutney

• Heat the oven to 200ºC/Gas 6.

• Put the sausages in a small baking dish and cook in the oven for 10 minutes.

• Shake the pan to make sure they are not sticking. Add the onion, pepper and garlic and toss well. Add the olive oil only if the sausages have not produced enough fat to coat the vegetables. Season with salt and pepper. Return to the oven for 10 minutes until beginning to brown.

• Add the artichoke and tomatoes, stir well, then return to the oven for 10–15 minutes until all the vegetables are tender and browned.

• Serve with mashed sweet potatoes and some chutney, if liked.
